For the perfect Jollof, let the tomato base cook down properly until it's thick and aromatic. This is the secret to great flavor!
Blend tomatoes, red peppers, scotch bonnet, and half the onions until smooth.
Heat oil in a large pot and fry the remaining chopped onions until golden.
Add tomato paste and fry for 2 minutes, then add the blended pepper mixture.
Cook the sauce for 15-20 minutes until it reduces and deepens in color.
Add the rice, seasoning, bay leaves, and stock. Bring to a boil.
Reduce heat, cover, and simmer for 20-25 minutes until rice is tender.
Let it rest for 5 minutes before serving with fried plantains.
